An on-the-spot potato cabbage soup turned out to be super simple & friendly when we were both sick over the holidays. It's become one of our favorite recipes, so we thought we'd share it with you...

Kai adapted a few recipes to make do with what we had in the house, since we were unable to get to a market - and the amounts are guesses because he's the kind of cook who doesn't measure - how is that for a hard sell, ha! - seriously, I have never in my life been a fan of cooked cabbage - but something about the gentle broth and simplicity of this was incredibly calming. We hope it offers something similar or reminds you of your favorite soup to lean into in when you need it...
Ingredients: this was what we had in the kitchen, adjust to suit yours!
1+ Tbs of dried fennel - 2 tsp of granulated garlic - 2 med sized yellow potatoes (or whatever potatoes you wish) cubed in chunks with skin on - 1/2 med sized cabbage cut into similar size as potatoes - 1/2 to 1 tsp smoked paprika - enough veg broth to cover by an inch (homemade is best, in a pinch we used better than bouillon brand's premium seasoned vegetable base).
Throw it all into a pot and & gently simmer just until potatoes are fork tender. Salt & pepper to taste.
Adjust how you wish - the important thing is to pause, inhale the steam, and savor the simplicity...
